Nokayaひやおろしひやおろし

motoA bottle given to me as a souvenir from Toyama. I had never heard of it before. From the moment you put it in your mouth, the sweetness is all over the place. From there, the umami comes out! It is an explosion of umami that is typical of hiyaoroshi, and it is very good. The sweetness is strong, but the acidity and astringency that follows keeps it from being too strong. It is light and easy to drink despite its strong umami. It is probably one of my favorites among sweet hiyaoroshi. There are so many delicious sake that I don't know about.
