On the day of opening, faint sweetness, strong acidity & fizziness. It was youthful and beautiful. It would be more interesting to leave it. The recommendation seems to be to let it sit for 3 days....
Then I put it in the fridge for 5 days.
The fizzy feeling is still there a little but closed.
At room temperature, it has a mild lactic acidity and sharpness.
It's now a sake that goes well with food!
