The toji at Urasato Shuzo is apparently named Chikara Urasato.
The brewery is dedicated exclusively to "Ogawa yeast" from Ibaraki Prefecture.
Chikara Ogawa is the creator of Ogawa yeast.
I think it is an amazing story.
Urasato's Junmai Daiginjo.
It has a nice sharpness and melon-like sweetness and aroma.
The lingering aftertaste is weak and disappears the moment you feel the umami, and the next umami comes in again.
It is an interesting sake.
I would like to pay attention to it and drink it from now on.
