I looked it up and it seems to be a revived strain of Kyokai No.1 yeast.
The sweetness and acidity of today's sake with the freshness of the cedar barrels.
The fact that it doesn't get heavy is typical of Yamamoto.
It's also nice that it's Miyamanishiki!
