Shinmasa Ecru was served to me at a Japanese sake bar in Shinyoko.
It wasn't even on the menu, but they served it to a first-timer...
Needless to say, the taste is delicious.
The sweetness spreads quickly and the acidity finishes it off nicely.
If I had learned to drink this kind of sake at the beginning, I would have been swamped much sooner.
