It has been about 3 years since I have had this sake. The last time I drank this sake, I avoided it because I did not have a good image of it, but after shopping for a while at a liquor store, the clerk approached me and we had a little chat. I was in the middle of a conversation when this sake appeared on the menu. Apparently, the toji had changed, and the sake was now made by that famous sake brewer, Jyushiyo.
He seems to have studied at a famous sake brewery called Jyushiyo. So we went to the sake brewery.

The opening of the bottle was quiet and very normal. When I put the sake cup close to my mouth, I could smell a pleasant aroma. It is colorless and transparent.
First comes the sweetness.
Then comes the pungency and bitterness. I was surprised to find that the image of the sake has changed drastically from the last time I drank it.
I think it is a little sweeter. I think it is not bad. My impression has changed a little. It is a selfish impression, but Yamaguchi's sake may be a sake that does not disturb you, for better or worse.
By the way, it has considerably more flavor than Otters.
