On the attack, it has a mild sweetness and umami reminiscent of bananas and yogurt.
After that, sourness and bitterness slowly override the taste buds, and the lingering scent of young leaves leaves leaves the nose.
Because the sake rice is Gohyakumangoku, the aroma is reminiscent of a dry sake, but the umami and sourness are also present, making it a truly umami dry sake.
The texture has a bone structure, so it would go well with bowls and cheeses!
