By using Nagano yeast with Yamae-Nishiki, which is a local product, this junmai ginjo has a gorgeous, yet refreshingly crisp finish. The umami and acidity that spreads across the palate enhances the flavor of the ingredients, making it easy to pair with simple dishes.
The aroma is green apple-like.
