There are too many different kinds of mansaku flowers, but this is probably one of the centers among them. Cute label. If you look closely, you can see the word "rice" in the middle of the turtle shell. The aroma is sweet and fresh, pineapple-like. However, when you drink it, it is not sweet but has a strong, tangy gasiness, and the umami of rice with a touch of astringency gradually comes out, and then it is gradually lifted up. It is not so sharp, but the astringency gives the impression of dryness. At room temperature, the bitterness increases. At 40°C (104°F), the spiciness fades and it becomes sour, sweet, and bitter, with a unique heated flavor that is a little like a heavier lemon. The bitterness increases as the temperature is raised, so the appropriate temperature for heating up is low. On the second and third days, the sweetness increases slightly, approaching the flavor of modern sake, but there is a considerable gap between the pineapple aroma and the astringent, spicy taste. Personally, I would probably cool it down or warm it up to lukewarm, which is unique but well-balanced.
