When the foaming settles down, the sweetness of the rice and the bitterness of the alcohol come at the same time.
The sweetness and bitterness disappear without lingering, but the small amount of rice that remains in the mouth gives a little sweetness.
It is often described as "silky", but I wonder if the smoothness makes it that way. Personally, I think it is like powdered snow.
It melts quickly, but it remains moist, which is a good match.
I felt that smooth food goes well with snacks. I feel that tofu, albacore, and foods with a smooth texture go well with it. Because of the acidity, it seems to go well with fatty foods such as tempura. Personally, I felt it was a sake I would like to enjoy with motsunabe ✨.
