The 6th Japanese Sake Festival @ Osaka Bay Tower ①.
■Nagayama Shuzo / "Yamazaru" Yamaguchi Pref.
I participated in the Japanese Sake Festival with legendary bouken-san.
We tasted some sake at the "Yamazaru" booth, which was not crowded, because we wanted to start without a line.
We offered a toast to the toji, Mr. Gentaro Nagayama, who passed away suddenly in August at the young age of 31.
Yamazaru" is an unfiltered unpasteurized sake.
It is made from "Kokuyako," a fantastic rice produced in Yamaguchi Prefecture.
I like it because it has a strong umami flavor.
Junmai Ginjo Aiyamazaru
This is the last brewing of Aizan and the first brewing of Aizan. The yeast used is 1901, which Toji Gentaro loved very much. It is sweet and gorgeous. We took our time to savor it.
It is a difficult time, but it seems that the next toji will be Mr. Inose, who graduated from the same agricultural university as the late Mr. Gentaro and has been brewing sake with him for a long time.
