It was sold at a sake festival in Niigata. It is a delicate, unpasteurized sake that is recommended to be consumed within two months.
It is watery on the palate. After that comes a soft sweetness and acidity, but the balance between them is so good that the umami flavor seems to blend into the whole body. The aftertaste is also very pleasant.
For the first time in a long time, I was very impressed with sake.
