During the Obon vacation, I procured Kubota at the supermarket nearest my parents' house. Kubota conjures up images of Manju, Hekiju, and Senju, but this Junmai Daiginjo seems to be a sake that has been in the lineup since 2018. It is made from Gohyakumangoku, has a rice polishing ratio of 50%, and an alcohol content of 15%.
It is a well-balanced sake, and according to its website, goes well with marinated salmon, etc. This time we had it with kombusame (sashimi of chicken), a souvenir from Toyama (Grand Marche Takeda). Delicious.
