No.6 Shinsei's only standard sake, No. 6 is a line of sake brewed with the aim of directly expressing the appeal of yeast No. 6. Nama-shu is only available during the cooler months of winter and spring. This is because the flavor of unpasteurized, unsterilized sake tends to change easily. However, "No. 6" has a storage control system of less than -5 degrees Celsius in the brewery, and is only available at selected specialty sake stores. *About the handling of "No.6 Nama-shu is unpasteurized and perishable. No. 6" is available within three months from the month of shipment. *About the rice used for "No.6 Unlike "colors," which focuses on a single rice variety, the "No. 6" series emphasizes the quality of each farmer's rice, so the rice variety is not always the same. For this reason, we do not indicate the name of the specific rice used, but we always use rice grown in Akita Prefecture or rice equivalent to sake rice such as "Kame-no-o" or "Rikuwa 132".
