This sake is brewed with 80% polished Yamada-Nishiki rice and fermented for a long time at low temperature with ultra-hard water.
It has the full-bodied, robust flavor and fullness of 80% polished rice with just the right amount of acidity, sweetness, and a refreshing, slightly blue aroma.
Right in the middle of my favorite!
