Isoboast Tokubetsu Honjozo Nama-Nihonjozo Shiboritate Limited Edition Sake Brewer: Isoban Shuzo K.K. (Yaizu City, Shizuoka Prefecture) Special Honjozo Nama-Nagarazake (limited distribution) Rice used: 100% Yamadanishiki (new rice) from Tojo, Hyogo Prefecture. Polishing ratio] Koji rice: 55%, Kake rice: 60 Alcohol content】18度以上未満19度 Yeast] New-5 (Shizuoka yeast) Sake meter] +6 Acidity】1.3 Sake Cup】Inoguchi Aroma】+1.5(Aroma of melon, white peach and rice) Appearance】Crystal [Taste] [Mouthfeel Body: 2.5 Acidity: 1.5 Sweetness: 1.5 Umami: 2.0 Bitterness: 1.0 Lingering: Medium. Slightly alcoholic warmth, while the umami of rice and soft acidity quietly fades away. Impression] Classical, mellow, and slightly light. This was my first saké after passing the sake diploma. The aroma was expected to be banana, but it was not so much, but rather a gentle melon feeling. The taste is full of the solid body of high alcohol and the sense of a pure sake. The fusion of the fullness from the Hyogo Tokushu A district Yamadanishiki and the sharpness from the alkaloids is really funky. Pairing】Pairs well with light-flavored dishes such as white-meat sashimi, grilled sea bream, and boiled tofu. Repeat Score] 2.0
