Ehime, Seiyo City. Utsunomiya Brewery Co.
Junmai sake Kashin.
Yes, this is Kashin.
I bought this sake at the OSAKA SAKE & FOOD EXPO 2024 event in Ogimachi Park.
I thought it was "Hanakami" or "Hanagami," but the label on the back clearly says "Kashin.
Utsunomiya Sake Brewery is located both in Tochigi Prefecture and Ehime Prefecture.
I had it with cold sake.
The color was a light pink like rosé wine.
It is made with peach-colored yeast, which is more transparent than the color of ancient rice such as Ine-Manbaike.
The peach-colored yeast was apparently developed by Shigeaki Utsunomiya, the fourth generation brewer.
They also informed on their website that they don't use red yeast 😅.
The aroma is slightly sweet and fruity, somewhat preconceived rosé wine aroma.
The mouthfeel is like ripe fruit juice that does not irritate the tongue because of its low alcohol content.
The taste moves from a gentle sweetness with no curd to a very mild slight acidity, with a taste of ripe fruit-like sweetness and a trace of astringency in the aftertaste.
This is a good sake with a lot of character 😋.
Ingredients: Rice (domestic), Rice Koji (domestic)
Polishing ratio: 75
Alcohol content: 9%.
