Today I went to Takadanobaba to fill up my stamp card at Sake Rakusan. First up was Kido, a Yamadanishiki low-polishing 80% Yamada Nishiki grown in the Agara field. It has a clean and refreshing aroma that is typical of Kido, but also has a strong umami and richness that comes with a gusto. Kido with coarseness, very fresh.
