Nagasaki Sake HIRAN Nikkomaru Unfiltered Nama This is the first Nagasaki sake. It is Hiran from Mori Sake Brewery. The first is that this sake is made not from rice specially used for sake (Yamada-Nishiki, Omachi, etc.), but from edible rice (Nikkomaru), which is eaten in Nagasaki. The second is that the sake is made using the traditional method of sake brewing that has been used since the Edo period (1603-1868), which is a very time-consuming process using lactic acid bacteria that have existed in the brewery for centuries, without the use of yeast, etc. Recently, the NHK broadcast of the Tsukishioi Sake Brewery also introduced the process of making sake using the traditional sake yeast. I would like to try Japanese moon someday. HIRAN's Nikkomaru has a grapefruit-like aroma and a lactic sweet and sour taste in the mouth. It tastes like the grapefruit flavor of Calpis. The alcohol content is 14%, so you can drink it like a juice without feeling alcohol. Wow, it's delicious! It is not easy to find it sold in many places, but if I find it, I will buy it immediately.
