<Triple Acid Malic and Lactic Acid Citric Acid
The theme of this sake is, simply put, "Acid". It is a triple acid (acidity) made from malic acid from Association 77 yeast, lactic acid from Yamahai yeast, and citric acid from white malted rice. This is definitely the kind of sake that was decided on the spur of the moment while drunk.
The palate starts with the sour sweetness of sour apples, followed by the sugar content of apple nectar. The second half is nicely finished off by the acidity and bitterness of the lemon, leaving a clean aftertaste.
Oh, I don't feel malic acid from No. 77 yeast, citric acid from white malted rice, and lactic acid from Yamahai... that much, I guess. The acidity is so effective, it's vivid and ummah! But it has a lovely sweetness, so even I, who don't like acidity, enjoyed it.
If I were to compare it to Ghibli's "From Up On Poppy Hill," it would be Sora-chan. Anyway, she is cute. Even though her father is away, her mother is studying abroad, and her older sister is always scolding her, she is still fresh and cute.
