Very typical dry taste. It has plenty of umami, as Junmai sake should. It is also astringent and has almost no acidity. It mellows out when heated, but the spiciness and umami remain the same. It has the best balance as a Niigata dry junmai. It is a cup with a soft character, but it is considered to be for old men. Mr. Ota is from Tokushima He cried at the Joruri! My mother is from the southern part of Awaji Island, and she said that Joruri used to come to her garden and give her rice, and it really made her cry! And the restaurant in Tokushima was also wonderful!
