According to my research, Kameizumi Shuzo was founded in 1897, the 30th year of Meiji. The brewery is located at the foot of the naturally rich Haskesan Mountain, where a spring that has never dried up since around Kan'ei 12 years ago gushes out in full force. The water quality is soft water from the clear Niyodo River system. The quality of the water is soft, from the clear Niyodo River system, and is said to be slightly sweet, with a gentle thirst-quenching taste.
When poured into a glass, it has a sweet, pineapple-like fruit aroma. My first impression when I drank it was pineapple...lol!
The strong sweetness with a hint of sourness may be a point of disagreement.
It's not suitable as a midday drink, but it's a delicious sake to sip on its own.
