3. ume-no-juku Un series. unfeigned (from the heart) saké. It's fresh and sour on the palate, with a hint of umami, but soon becomes spicy. 70%, so you can taste the rice, but it's basically clean sake. 70%, seasonal junmai nama sake. 1,450 yen, Otsuka Sake Shop in Honmachi.
