It is brewed in a wooden bucket using short-stemmed wataribune from Kasai City, and has a full flavor and the softness typical of a wooden bucket. This sake is brewed in a reclaimed wooden bucket that was used in the early Taisho era, so the aroma of cedar is not as strong as in the new bucket, but the texture of the wooden bucket is fully expressed. The rice used for this sake is a variety called Watarifune. Watarifune, which is mainly produced in Shiga Prefecture, is No. 6 and taller. On the other hand, the Wataribune used this time is No.2 and is called Tankan Wataribune because of its short stature. Tan culm Wataribune is the father of Yamada Nishiki, the king of sake rice.
