Omachi was so good that I bought Yamadanishiki as well. Yamada-Nishiki has enough unctuous sweetness and umami. However, the clean acidity does a good job in the background. Thanks to this, it gives the impression of being able to cut through without being cloying. After a day, the acidity has decreased and the sweetness has come to the fore. Aji Nanban zuke goes well with it. Vinegar goes well with it.
