I bought one I've never had before from Kimata.
The rice polishing ratio of 92% is one of the highest I've ever had.
When I opened the bottle, I imagined that it would be like "kome".
When I poured it, it was a little brownish, and I had the image of a powerful sake that my father would like.
However, when I drank it, it was not as strong as I expected, and it was a little sour.
As you drink it slowly, the barrel aroma gradually increases.
It is not the type of sake that can be drunk quickly in terms of taste, and the alcohol content is high, so it will be interesting to drink it slowly.
The second day
At first, it is cold and not so different from the day before.
As the temperature rises, the complex flavors that were not so apparent the day before come out, and the aroma is stronger than the day before.
Third day
The overall impression is the same, but the sourness is coming out.
You can feel the aroma even when it's cold.
It's very different from the type of sake I've been drinking recently, and it's an interesting change of pace.
I think it will become more distinctive when it's heated.
