The best rice for sake brewing is Yamada Nishiki from Tojo. This is Vinos Yamazaki's original Honjozo, brewed by hand with subterranean water from the Oigawa River in the Southern Alps, using our own yeast, and fermented at low temperatures during small-batch brewing.
