It comes in the order of sharpness, acidity, and sweetness. It is a well-balanced dry sake. It is a little too much for simmered bamboo shoots, but it went perfectly with grilled pork with mushrooms and ginger. It is a very good sake, though Kagoshima people think it is a sweetpotato shochu. It is very good sake.
