The taste is strongly lactic acidic 😋. MLF is listed below 🖋. What is Malolactic Fermentation...MLF stands for Malo-Lactic Fermentation. Malic acid is the most common fermentation method used for most red wines. Malic acid is decomposed into lactic acid and carbon dioxide by lactic acid bacteria, resulting in a mild acidity. This gives the wine a rounded flavor. The Mitobe Sake Brewery was the first in Japan to use lactic acid in sake brewing.
