Yamada-Nishiki is the highest grade of rice suitable for sake brewing. It has a unique, clean, intense, and elegant Muscat-like aroma, a fine gasiness, and a smooth mouthfeel that is pleasant even after swallowing, and a moderate sweetness that spreads a good flavor.
