I'm so motivated that I'm posting this in succession. And this sake was also a gift. This time of year is a scream of joy.
This brewery seems to have changed the quality or taste of their sake recently. I can't say for sure because I can't get it locally, but it used to be spiky and not really my favorite, but last year and this year, it has become sweeter. The sake rice is called Terroir, and it seems that they use No. 7 and No. 9 yeast.
It also has a sweetness.
Is this a recent trend?
The image of this sake is similar to that of Tobiroki, but it has more sharpness than Tobiroki. It seems to go well with simmered dishes with strong flavors and other rich foods.
