Nojoho" sake rice is the parent stock of "Celebration," a sake rice unique to Kyoto. At one time, along with Yamada-Nishiki, Nojoho was regarded as one of the two best sake rice varieties, and had a reputation for its taste. It is similar to the Shuku rice in terms of variety, and is characterized by its soft, thick flesh and high flavor. Its production is very small, making it a "phantom sake rice. It has a refreshing aroma of white grapes and pineapple at the top, a dry and sharp taste, and a sweet aroma like coconut milk at the end. It has a fruity yet wildly dry and firm rice flavor. Convergence is dry.
