Kaze no Moriweeks2025 愛山607
かぶら
Clear and colorless
Slightly effervescent
Mild raw material aroma with an intermediate level of powderiness and graininess, like that of white dumplings.
Sweet aroma reminiscent of honeysuckle and white peach.
The attack is drier than the aroma suggests.
There is a clear acidity.
The umami is well balanced with a firmness that is typical of Kaze no Mori.
Compared to the Yamadanishiki cuvée, the collaboration of acidity, dryness, and hardness results in a very sharp taste.
Kaze no Mori event commemorative sake Aiyama version
The sweet aroma, low alcohol and sharp taste are quite impressive!
When you put the elements together, it is like an elegant Purinee, and compared to the Yamadanishiki version, it is a bottle that stands out for its elegance.
Personally, I highly appreciate the quality of this sake, and if more and more sake can be made with this kind of combination of elements, the wine population will be attracted to it.
