Polishing ratio: 50% koji rice, 55% kakemai rice. Alcohol content 15%. It is delicious with a smooth taste and soft mouthfeel. It has a slight acidity and goes down smoothly. It does not interfere with food and seems to go well with any dishes. I drank it while enjoying Macro sashimi and Nakadori (a kind of fish that is served in the middle of the fish), and it was delicious. The label says, "The brewery is located in a basin at the foot of a mountain in Wakayama, where there are many mountainous areas. It is a good place for sake brewing because of the cool morning and evening temperatures and the abundance of groundwater refined by the trees, mountains, and the earth. We try to express the high quality water of Kishu. It is characterized by its softness on the palate and its aroma when it enters the mouth. Please enjoy the soft taste of autumn. We hope you can feel the climate of Kishu. It is a sake to be enjoyed while enjoying the autumn season that has arrived after the long hot summer.
