I have not had this Omine for a long time during a trip to Yamaguchi. I really wanted to buy a draft sake, but due to the restrictions of keeping it cold during the trip, I chose the fire-aged version.
Fruity aroma. Fresh sweetness, followed by the umami of rice, and some acidity.
I had it with yakiniku (grilled meat) and thought it went well with it.
