My husband bought this bottle in Akita.
The store staff recommended that I enjoy the changes in flavor over several days after opening the bottle, so I enjoyed it slowly over a week or more as they recommended.
I liked the umami flavor, mild sweetness, and acidity that is typical of a sake made from the traditional sake brewing method, and the soft, bubbly taste.
I used to like sake best when the bottle was just opened, but this one was certainly a fun (and delicious) change.
I recommend drinking it at the temperature indicated on the label, after taking it out of the refrigerator for a little while. The fullness and depth of flavor is different.
I think this would also be delicious heated.
The price is reasonable and surprising.
