The acidity is strong and refreshing. As the website says, it's like a pickled plum. (It is not too sour. (Not too sour, but with a hint of fruitiness.) I drank it with sausages, and it certainly went well with meat dishes. It is also good with steak. I thought it would be sweet since it has a Sake degree of -2, but it is not that sweet. Of course, it is not spicy either. I would like to try X and Y next year when the time comes.
