Tonight's accompaniment is a bottle of this one, which has a stylish but hard to read label. It is a summer sake, but it is cold season. When I opened the bottle, I was surprised to find a gorgeous ginjo aroma. It has a nice aroma. In the mouth, a delicate cotton candy-like sweetness spreads over the palate, balanced by a tartness and bitterness that seem to hide in plain sight. Delicious. Including the tangy sensation of the bubbles on the tip of the tongue, it is truly a summer sake (lol).
When paired with a salad dressed with homemade ume vinegar, yukari and mayonnaise, the sweetness is enhanced and it is absolutely delicious. Roasted yam with miso mayo and yuzu juice makes the sake fruity. It's good too. The oil from the wok-fried raw kikurage mushrooms and egg also flows nicely. There is no reason why the miso in the Spanish Mackerel Rikyuyaki does not go well with sake. It is delicious.
It was a wonderful sake that is good both as it is and with a meal!
