I wanted to try this sake from a sake brewery in Hirado, Nagasaki Prefecture, because it has a good reputation.
I thought it would be a good sake for a meal with its deep acidity and richness due to the fact that it's made from a traditional sake yeast stock.
But after a day, it became mellower and I think I prefer this one. I thought it was more to my liking.
I like Hirado and Ikitsuki Island, so I would like to visit there again.
