I couldn't wait for the holidays to compare R-type and S-type drinks. First, the R type. A hint of yeast? Acid? A faint yeast or acid aroma.
When you drink it, you can feel a light, petitish feeling, a sweet taste like white peaches, and a slight bitterness. It has a light and crisp taste that is different from the Niimasa I imagined.
Pair it with sashimi. It is not a crisp sake, so if you ask me if it goes well with it, I would say it is a little subtle. 😅It might go better with carpaccio made with light white fish.
