It has a moderate ginjo aroma with a hint of sweetness and a little acidity. It has a rich umami flavor with a bitter aftertaste that finishes with a crisp finish. The sake rice is Watafune No. 2, the brewer's own ginjo yeast, and the taste is a bit bitter and sharp on the finish. But it is my favorite type of sake. I think Koga in Shiga Prefecture is a region that produces delicious sake.
