2025.48th. Kaze no Mori, which I have not had in a while, is a new sake brewing rice from Nara prefecture, Nanadoro. The taste is not so gorgeous, as it is descended from dewy leaf wind, and you can feel the wildness of the rice. It has a very complex flavor, with a sweetness and umami of the rice. It is like a slightly sweeter version of dewy-leaf style sake. The sharp taste of hard water that is typical of Kaze no Mori is still present, but the sweetness gives it a strange taste. Officially, it is described as floral, and I see what you mean. Kaze no Mori is an easy sake to buy, so when I buy it again, this sake will be on my list. Thank you very much for your hospitality.
