ありんこI had an image of kijoshu as having a deep taste, but this sake is the exact opposite, with a clean aftertaste. It smells like Japanese pear and has a strong acidity.
I was surprised to learn that there is such a thing as kijo-zake! I had many new discoveries with this sake.
