My sensitivity to the flavors of sake has been increasing.
I drank Gikyo thinking that this would be the one I would like.
While I could feel the goodness of the unpasteurized sake, I thought it was a little different from my taste.
When I looked it up, I found out that the sake rice, Gohyakumangoku, gives it a light, refreshing taste.
So far, I've found that I like the kind with a lot of umami and a bitter aftertaste, so I thought it would be good if I could find a sake with a light, dry taste once in a while.
And this one is Gohyakumangoku, so I guess that's exactly what it is.
It was just a sake that I thought was delicious!
