Aizan 50 - Red Diamond <Ultra-limited unfiltered unpasteurized sake
This is a series of ultra-limited unfiltered unpasteurized sake brewed only once a year by Kangiku Meikyu. The sake is made with suitable rice for each concept, such as "Scene," "Thoughts," and "Occasional (for special occasions)," using a gorgeous design and a unique taste.
[Junmai Daiginjo / Aizan 50] Unfiltered Nama Sake
The concept color is "red" because of the name of the Aizan rice, and the theme is "jewel" because of its elegant and refined sweetness.
Because this rice requires delicate handling, we carefully treated the raw materials and conducted long-term unrefined fermentation at ultra-low temperatures, just as we do for the sake competition.
