Kangiku/True White/Junmai Daiginjo/New Unblended Sake (Omachi 50) 2023 4.0 Comparison of two types of Kangiku (2). This is "The Kangiku" kind of sake. It makes the most of the bitterness and umami of the rice. This sake is in contrast to True Red. It has no oriki (rice powder) involved, so the emphasis is on freshness and minerality. It is very different from True Red, which was released at the same time. It tastes better at room temperature, where you can feel the umami of the rice. It is best paired with kombu-marinated white fish. Personally, I think it is similar to "Gagakuyo". This kind of sake is becoming a trend these days. There are so many brands of Kangiku Meikozo that it is difficult to understand them all, but I would like to try as many as possible. The price of 1,980 yen for a junmai daiginjo is an exceptionally reasonable price.
