Kunigon Junmai Ginjyo Fukunoka Yamahai-brewed Rating 4.4-4.5 Rice : Fukunoka, contract grown in Fukushima prefecture, Polishing ratio : 60%, Sake meter : -2, Acidity : 1.5, Amino acidity : 1.3, Alcohol content : 15%. Junmai Ginjo-shu made with 100% Fukunoka and brewed in Yamahai. It is a refreshing Yamahai. Light, with an elegant sweetness, but converging with a slight lactic acidity, it has a slightly complex texture and is good as a mid-meal sake. Fukunoka has the characteristic of not producing a lot of acid and amino acids, which makes this sake soft and full without any stinginess. The yeast used is "F7-01" to take advantage of the sake's elegant flavor without using aromatic yeast. It makes for a slightly sweet sake.
