Sake made from five different Akita yeasts and five different types of sake rice. Purchased as this is the last in the series.
We will drink it cold.
The color is clear and colorless.
The top aroma is arukou, which reaches directly to the back of the nose.
The mouthfeel is clear and smooth.
The taste starts with a mild sweetness, which is quickly followed by a sharp acidity. The aftertaste is sharp and dry.
It is still complex, and sharper and more acidic than expected.
I think it goes better with food than on its own.
Ingredients: Rice (from Akita Prefecture), rice malt (from Akita Prefecture)
Polishing ratio: 50%.
Yeast: Kyokai No.6, AK-1, Akita yeast No.12, Komachi R-5, UT-2
Sake Mai: Akita Sake Komachi (6%), Koji: Momota (19%), Soke: Miyamanishiki (12%), Naka-Kake: Misanishiki (22%), Tome-Kake: (41%)
Alcohol content: 15%.
