This place is amazing! This is a gem of a sake made from "Yamadanishiki" produced in the special A district of Hyogo Prefecture and polished to 35%. Among the "Nakadori", the "Chogoku" is made from carefully selected portions that ferment particularly vigorously. The unique sterilization and storage techniques used to produce this sake allow it to have both the freshness of a draft sake and the elegance of a daiginjo.
Pairing suggestion: To take advantage of this "fruity acidity," scallop carpaccio or cold vegetables with a little fruit (peach or pear) would be an interesting combination. The potential of the sake itself is so high that it is a work of art that is complete on its own without any snacks!
