I made Kiritanpo nabe (Kiritanpo hot pot) to go with Akita's local sake.
The richness and flavor of the chicken broth and salted malt, and the sweetness of the kiritanpo go best with the sake.
The sweetness was lessened and the umami was more central than when drinking sake alone 😁.
Local products go well together!
